Before the farm-to-table movement in Hawaii took off, chef Bev Gannon has been perfecting her craft as the “beacon” of Hawaii Regional cuisine since 1988. Located on the lower slopes of Haleakala sits Hali’imaile General Store, Maui’s favorite home town restaurant nestled in the pineapple fields of the low rolling hills of Haleakala. Chef Gannon shares her “elegant but unpretentious” fare comprised of ingredients from local farmers, served by an excellent staff in digs inspired by the pineapple plantations.
Hali’imaile General Store is Bev’s original and most acclaimed restaurant featuring eclectic Pacific regional American cuisine with Asian overtones. They strive to use freshest, local ingredients, and focus on service with aloha. It’s the perfect place for sharing meals with loved ones, close friends, and friends yet to be made.

Chef Bev was not always the rockstar chef she is nowadays, her success comes from the most humbling of beginnings. Her hard work and natural talent allowed her to run a catering business from home for a number of years, until Bev and Joe (Bev’s husband) thought it was time to make a change. They were also strongly encouraged by their devoted clients and friends to move the business out of the garage and into a commercial space!
It was almost destiny that the Gannon’s heard that “the store” (as many have always called it) was going to be made available for lease at Christmas time in 1987. They originally thought that it would be the perfect location for a gourmet take-out deli, catering headquarters, and general store. That plan went out the door the very first day, once they opened their doors for the first time there were over 100 people waiting for a bite to eat. “The store” had maybe five or six tables, no wait staff, and new patrons wanted to know, “Where do we sit?” So, Hali’imaile General Store is a restaurant today because that is what they, their very dear customers wanted.
