The Hideaway by Aloha Prime is one of Wailea’s Best New Restaurants

  • The Hideaway by Aloha Prime is a new chapter: Chef Allen and Shelby Rimorin have expanded from their beloved Kihei food truck into a full-service restaurant in Wailea Gateway Center.
  • Prime rib worth the trip: Chef Allen’s prime rib has quickly become one of the standout dishes in Wailea.
  • Familiar favorites with an elevated setting: Signature dishes like the Hawaiian Poke Plate and Hoisin BBQ Chicken return alongside new seafood and chef-driven specials.
  • A true local success story: A Maui-born chef with decades of island kitchen experience now serving one of Wailea’s most exciting dining experiences.

A New Favorite in Wailea: The Hideaway by Aloha Prime

Living in Wailea, I’m lucky to be surrounded by some of Maui’s best restaurants. Over the years, a few spots rise above the rest and become part of your regular routine. The Hideaway by Aloha Prime has quickly become one of those places. Located in the Wailea Gateway Center in the former Pita Paradise space, this new restaurant opened at the end of December 2025 and has already become one of our favorite places to eat.

Graduating from Kihei Food Truck to Wailea’s Gourmand Scene

Many of our clients and readers will remember Aloha Prime Eatery from their food truck days at South Maui Gardens in Kihei. We featured them on the site last year because the food was exceptional and the story behind the business was even better. Chef Allen Rimorin and his wife Shelby built that food truck from the ground up and quickly developed a loyal following. Seeing them make the leap into a full restaurant here in Wailea has been exciting to watch. The quality that made the food truck special has carried over, but the setting now matches the caliber of the cooking. The service deserves mention as well. From the moment you walk in the door, the team delivers the kind of warm and friendly hospitality that Maui is known for, while maintaining a polished and professional approach that fits perfectly with the Wailea dining scene.

Chef Allen’s Prime Rib Might Be the Best on Maui

Anyone who knows me knows I have a weakness for prime rib. I’ve ordered it all over the world over the years, and Chef Allen’s version at The Hideaway is right at the top of the list. It’s slow roasted, perfectly seasoned, and served exactly how you want it. The kind of dish that reminds you how good a classic can be when it’s done right. Chef Allen started his culinary career at Nick’s Fishmarket at the Fairmont Kea Lani, and you can see that fine dining background throughout the menu.

Elevated Island Cooking Inspired by Chef Allen’s Time at Nick’s Fishmarket

A couple dishes immediately brought back memories of Nick’s in the best way possible. The Blackened Seared Ahi Sashimi reminds me of the famous Black and Blue Ahi, while the Pan Seared Ono carries the same kind of balance and elegance we all love with Nick’s Fresh Fish Piccata. The kitchen clearly respects technique, but the food still feels relaxed and approachable, which fits the Wailea lifestyle perfectly. Just as impressive is how attentive the staff is throughout the meal. Plates arrive promptly, drinks are refreshed without needing to ask, and the team strikes that perfect balance between being present and letting you enjoy your evening.

The Sayles Team’s Favorite Dishes at The Hideaway

The best part about dining here is that many of the favorites from the original food truck are still on the menu. Alex always orders the Hawaiian Poke Plate, which is every bit as fresh and flavorful as it was in Kihei. Michael and Kim are loyal to the Hoisin BBQ Chicken. Erin usually convinces the table to order coconut shrimp to share, and Anthony never passes up the Hoisin BBQ Chicken lettuce wraps. Every dish feels thoughtful, generous, and made with pride.

A Local Maui Success Story Worth Supporting

What really makes The Hideaway special is the story behind it. Chef Allen was born and raised on Maui and spent more than two decades working in some of the island’s most respected kitchens. Opening this restaurant is the result of years of experience and a lot of hard work from both Allen and Shelby. For those of us who live in Wailea, it’s rewarding to see a local family succeed and create something this good right in our neighborhood. Whether you live here full time or are visiting the island, The Hideaway by Aloha Prime is absolutely worth adding to your dining rotation.
