Executive Chef Tylun Pang heads the culinary masterpiece of Kō restaurant in Wailea, boasting the only fine dining menu on Maui to offer cuisine inspired by the sugarcane plantation era. The ample menu size features local island favorites inspired out of family recipes that have been passed down for generations, including Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese favorites. The utilization of the island’s fresh produce, meat and seafood, allows Chef Pang to gives these authentic recipes a farm-fresh, contemporary twist.

Ko, which translates to sugarcane in Hawaiian, is inspired out of one Hawaii’s most famous time periods, the sugarcane plantation era. A time when people from around the world came to the Hawaiian Islands to work in the sugarcane fields. The plantation workers naturally brought recipes and cooking techniques from home, but utilized the ingredients available to them in the islands. The culinary evolution soon went on to be developed into what Islanders fondly refer to today as “local food.”
